Salmon & Salad

So as many of you may know, Jim worked as a chef for many years.  He even did a stint as a recipe development manager for Publix Supermarkets and had to create recipes that could be prepared simply for in-store demonstrations.  Little did we know how this skill would prove to be a great asset while traveling and cooking on a single burner induction stove or a propane cook stove. 


Jim makes elaborate and delicious meals for us.  Salmon is one of our favorites with a salad and homemade croutons and his breakfasts are amazing with pretty fruit creations.   No wonder we are gaining weight.....I blame him because it all tastes just so good.

When we started this adventure, we were certain that we would have to give up preparing some food items due to not having an oven. Well, that hasn't happened since Jim has mastered cooking all kinds of dishes in our cast iron pans including delicious meat loaf. The other thing that he has perfected is making biscuits as well as corn pone.

One of the things that we have been doing since we are "oven less" is to buy rotisserie chickens at various supermarkets and saving the bones after eating the chicken. Jim will make chicken stock from them and use the stock in other food dishes that he prepares. 


Oh, I can't forget all the meals he prepares out on an open fire 🔥. I love sweet potatoes & when we are boondocking (without electricity), you can be sure to find a sweet potato on our fire pit grill. 😊
